Death by Chocolate

Cherry Chocolate Cake w/ Ganache Frosting
*Box of choc. cake mix
*can of cherry pie filling
*2 eggs
*1/4 c. veg. oil
*1 teaspoon cinnamon
*1 teaspoon vanilla
*1 bag choc. chips







Mix first 6 ingredients together till blended well. Stir in chocolate chips. Pour batter into a well greased bunt pan and cook at 350 for an hour.

Ganache frosting:
*8 oz semi sweet or dark chocolate
*3/4 c. whipping cream
*2 tablespoons butter

Crumble the chocolate in a stainless steel bowl. Bring cream and butter to a boil and pour over the chocolate. Let stand 5 min and then whisk till smooth. Ganache will thicken as it cools. Place the cake on a wire rack to frost.

  2. I really liked this cake a lot. Very moist, and the frosting was GREAT.

    I would double the amount of frosting and add some cherry extract and a bit more cinnamon to boost the flavor just a bit. The chocolate chips were a great addition. What type of chips did you use? Were they semi-sweet?
